Christmas Pickled Cucumber

preserving fresh produce is a time-honoured tradition in farming communities all over the world. not only does it reduce food waste, it forms the basis to much regional cuisine. this is our version of the pickled cucumber, a common preserve in malaysia. made with cucumber grown at our farm, this pickle was first developed as a condiment for our signature smoked beef, but has since become a popular dish all on its own.
